Recipe: Low Country Boil

I finally got my Low Country Boil this summer! Y'all have no idea how badly I've been craving this since I wrote a blog post about it the other week. I'm glad that Patrick and his family like this almost as much as I do and that we were able to make it Saturday night for supper.


And you know, I had every intention of correctly documenting this boil. I wanted to be able to have a recipe to follow the next time we made it. Here's what happened instead...

Me - Wait! I want to put the seasoning in the water!
Patrick - Ok, have at it... um, you need to put in more than that. That's barely any!
Me - Well, how much do I put in?
Patrick - I dunno. Just pour until it feels right.

... and then I proceeded to dump the entire container of Old Bay into the pot because "it felt right".

So I don't have an exact recipe for y'all to follow. It's just a general idea of what happened to produce an excellent Low Country Boil. But some recipes are like that; sometimes you don't have exact measurements or times and it kind of works.



Ingredients
4 lbs Shrimp
10 Ears of Corn
4 lbs Red Potatoes
4 pkg of Andouille Sausage
Old Bay Seasoning
Cocktail Sauce
Butter

Directions
1. Shuck the ears of corn, wash them, and break each one in half. Cut the sausage into small pieces about 1/2" to 1" thick. Wash the potatoes {but don't cut these!}
2. Fill your pot with water and bring to a boil. Season to taste with Old Bay seasoning.
3. Add the potatoes to the pot, bring back to a boil, and cook for 10 minutes.
4. Add the sausage to the pot, bring back to a boil, and cook for another 15 minutes.
5. Add the corn to the pot, bring back to a boil, and cook for an additional 10 minutes or until the potatoes are done.
6. Add shrimp to the pot and cook for 2-3 minutes or until the shrimp turn pink. Be careful on this step so as not to overcook the shrimp!
7. Drain through a colander & serve on newspaper {or in a pan} with a little cocktail sauce and butter on the side.
8. Enjoy!



This is always, always, always best served when you have a group of friends and family to enjoy it with! & not just because this recipe makes a bunch of food, either. It's one of those meals that brings everyone to the table and keeps them there for awhile. 


Patrick and I were able to cook for his family and some family friends on Saturday - 10 people in all. If you're cooking for less, you can definitely cut this recipe down some!


Did I make anyone else crave Low Country Boil? Because even though I just ate it, I'm already ready to have it again!

  1. Ive never done or attended a low country boil before but it looks amazing! I love that everything is cooked together mixing up all the flavors! Haha I would have done the same thing with the Old Bay. It definitely feels right to just pour the whole thing in :)
