Recipe: Oven Roasted Zucchini

Is it just me or does everything at the farmer's market look and smell amazing? I go every week with a set list of things that I need to buy and then I walk away with more than I planned. I'm sorry. But the veggies look sooo good and it's hard to pass them up. All of this only costs $9? Ok, let me see what else I can add to the pile.

That happened this past Saturday morning and I ended up with zucchini that I wasn't planning on buying. I decided to add it to my dinner last night as a side dish and it was delicious, as always.


Oven Roasted Zucchini

Ingredients
Zucchini
Olive Oil
Pepper
Salt
Garlic Powder
Parmesan Cheese {shredded}
Marinara Sauce {for dipping}


Directions
1. Preheat the oven to 375 degrees.
2. Cut zucchini in half, lengthwise.
3. Drizzle with olive oil.
4. Season with pepper, salt & garlic powder and top with Parmesan cheese.
5. Bake on 375 for 15-20 min until tender/golden brown
6. Enjoy!
