You can file this under the list of things I've learned since moving into the same house with my husband after we got married: there are two very distinct cooking styles in our kitchen.
The "follow what the recipe says {unless onions are involved}" one and the "recipe? what recipe?" one.
Thank goodness for this blog! It's an easy way to start documenting what Patrick gets up to in the kitchen so that when we like what he cooks for dinner one night, we can replicate it again. Novel idea, right?

Patrick has a tradition of cooking chili every Halloween. It's what he loves to do to celebrate the holiday and this Halloween was no exception. He started the whole process Sunday night so that on Monday morning, all he had to do was pop everything into the crockpot and set it to low to cook while we were at work.
This chili was definitely the highlight of our Halloween evening last night! Well that, and the responses that we got back from kids when we asked them who they were dressed up as for Halloween {but that's another story for another day}

Halloween Chili
Ingredients
1 lb ground beef
1 lb ground sirloin
2 green bell peppers, chopped
4 cloves of garlic, minced
1/4 cup chili powder
1 tsp salt
1 tsp cumin
1/2 tsp crushed red pepper
1/4 tsp cayenne pepper
1 tsp paprika
2 15oz cans of tomato sauce
2 15oz cans of Original Rotel
1 15oz can of red kidney beans
1 15oz can of black beans
1 tbsp. brown sugar
1 jalapeño, diced
1 lb ground sirloin
2 green bell peppers, chopped
4 cloves of garlic, minced
1/4 cup chili powder
1 tsp salt
1 tsp cumin
1/2 tsp crushed red pepper
1/4 tsp cayenne pepper
1 tsp paprika
2 15oz cans of tomato sauce
2 15oz cans of Original Rotel
1 15oz can of red kidney beans
1 15oz can of black beans
1 tbsp. brown sugar
1 jalapeño, diced
Directions
1. Sauté chopped green bell pepper with a tablespoon of olive oil in a large skillet over medium heat.
2. Once the bell pepper is softened, add in minced garlic. Stir frequently and sauté until fragrant.
3. Add in ground beef, ground sirloin, and all dry seasonings to the skillet. Stir frequently until all of the meat is browned.
4. Place contents from the skillet into a crockpot and add in the tomato sauce, Original Rotel, red kidney beans, black beans, brown sugar, & jalapenño. Stir everything together and set your crockpot for low for 6-8 hours.
5. Enjoy!

Y'all, this chili was so good and the very best part is now that we actually have the ingredients and directions written down, we can make it again! Hallelujah.
We served ours with shredded cheese, sour cream, and cornbread muffins and shared with our friends as we handed out Halloween candy at their house last night.
