Meal Planning #5

It's been a couple of weeks since one of these, hasn't it?


I blame that on all of the beach weekends that I've had lately! Out of the last four weekends, I've spent three of them at the beach, and I have zero complaints about it. Spending my days biking and beaching is exactly how I like my weekends to go.


Enough about the weekend - here's what we've got on tap for supper this week!

Sunday  - Brined & Baked Chicken, green beans, & little red potatoes
Monday - Roasted Spaghetti Squash w/ chicken & broccoli
Wednesday - Baked Chicken Fingers & corn on the cob 
Thursday - Breakfast for Dinner (including these biscuits!)
Friday - salad & pizza takeout from a local Greek restaurant
Saturday - burgers & hotdogs at the lake

... can you tell that we're on a mission to do some light, healthy eating this week as we head into Memorial Day Weekend? There's a lot of chicken on the menu this week but nothing on the grill since it's that time of year again for pop up thunderstorms every afternoon.

Well, that, and because we definitely need a new grill. Hello, Memorial Day Weekend sales at Lowes ;)

  2. Those chicken ranch tacos look so good. My husband is freaked out by anything ranch (he's nuts), but I bet I could sneak these in and he'd never even know. Breakfast for dinner sounds amazing, too!
