Recipe: Monday Fun-Day Pot Roast

One of the good things about moving back home is that I am no longer responsible for 100% of my meals. I've got my breakfast & lunch every day, but usually my parents take care of supper {unless I've been overly ambitious on a Sunday afternoon & planned/shopped for a meal}. This means that blogging about a new recipe takes on a whole new challenge: I miss the majority of the meal prep.

So what's a girl to do?

... wake her mom up on a Monday morning before work to hand off her SLR camera so her mom {& dad!} can take pictures while cooking supper later.

Yup.

That happened.

No shame.

Have I mentioned how awesome my parents are lately?


Monday Fun-Day Pot Roast
{because yup, that's all we could come up with for a name while watching SYTYCD last night}

Ingredients
2 - 3 lbs Sirloin Tip Roast
2 cups of water
2 packets of dry Italian dressing seasoning
2 packets Ranch dressing seasoning
2 packets brown gravy mix

Directions
1. Place sirloin tip roast into slow cooker {pro tip: use a liner!}
2. Pour water and all six packets of seasoning into a mixing bowl. Stir well and pour on top of the sirloin tip roast.
3. Cook on high for 4.5 hours.
4. Enjoy!



We had ours with steamed white rice and petite lima beans but you can add small potatoes and carrots into the slow cooker for another option.


I loved this dinner! I ended up going back for seconds because y'all, the gravy that is made in the slow cooker is delish! It was perfect on top of the pot roast and even better with the white rice.

  5. The slow cooker is my very best friend - especially since having a baby! I swear it makes the yummiest meals! This looks delicious :)
